Cashew Granola Cookie

VEGAN  | WHEAT & GRAIN FREE 

The way to our hearts... the smell of home made cookies. This recipe is quick and easy to make! A healthier take on breakfast cookies that still tastes scrumptious. Because who doesn't love a fresh baked cookie. The perfect snack after school or work.

 

Ingredients

  • 80g Almond meal
  • 60g of The Monday Food Co granola of choice
  • 80g of Maple Syrup or Lakanto keto maple flavoured syrup 
  • 80g Cashew butter 
  • 20g Organic coconut milk powder
  • 20g Desiccated coconut 
  • Pinch of salt

You will need:

  • Food processor 
  • 20cm Square tin 
  • Baking paper
  • Stainless steel bowl

 

 

 

Instructions

  1. Pre-heat the oven 180 degrees
  2. Place all ingredients into food processor, process until well combined dough like consistency.
  3. Roll into small 6 - 8 balls, then place on tray lined with baking paper and flatten. Optional: Top with a sprinkle for granola for extra crunch!
  4. Bake for approx. 15 - 20 minutes or until golden brown.
  5. Leave to cool and enjoy!
