These Keto Chocolate Crackles are a delightful treat that both kids and adults will love. By incorporating The Monday Food Co Keto Granola, we add a delicious crunch and wholesome ingredients to the classic chocolate crackle recipe while keeping it keto-friendly.

Ingredients

  • 1 cup of The Monday Food Co Keto Granola (choose your favorite flavour)
  • 1/2 cup of unsweetened shredded coconut
  • 1/4 cup of unsweetened cocoa powder
  • 1/4 cup of coconut oil
  • 1/4 cup of Keto Maple (or your preferred keto-friendly sweetener)
  • 1 teaspoon of vanilla extract
  • A pinch of salt

Instructions

  1. Prepare Muffin Tray: Line a muffin tray with paper cupcake liners or silicone molds. This will make it easier to remove the chocolate crackles once they've set.
  2. Melt the Coconut Oil: In a microwave-safe bowl or on the stovetop, melt the coconut oil until it becomes a clear liquid.
  3. Mix Dry Ingredients: In a large mixing bowl, combine The Monday Food Co Keto Granola, unsweetened shredded coconut, and unsweetened cocoa powder.
  4. Sweeten and Flavor: Stir in the Keto Maple (or your preferred keto-friendly sweetener), vanilla extract, and a pinch of salt. Mix everything thoroughly to ensure an even distribution of flavours. Here you can add extra nuts, rice puffs or other additions if you like.
  5. Add Melted Coconut Oil: Pour the melted coconut oil over the dry ingredients. Stir well to ensure all the ingredients are coated evenly.
  6. Portion the Mixture: Scoop the mixture into the cupcake liners or silicone molds. You can adjust the portion size according to your preference. Press down on each portion to compact it.
