This Keto Easter Granola Nest with Berry Eggs is a playful and delicious way to celebrate the holiday without compromising your low-carb lifestyle. Ingredients:

    • 1 cup of The Monday Food Co Keto Granola (Caramel & Macadamia flavor works wonderfully)
    • 1/4 cup of unsweetened shredded coconut
    • 2 tablespoons of coconut oil, melted
    • 2 tablespoons of sugar-free sweetener (such as erythritol or monk fruit)
    • 1/2 teaspoon of vanilla extract
    • A pinch of salt
    • Keto-friendly chocolate eggs or berries for decoration
    • Note: You can also melt some Keto Chocolate into the nest mix for some extra Easter goodness 

Instructions:

For the Granola Nest:

    • Preheat the Oven: Preheat your oven to 325°F (163°C).
    • Prepare the Granola Mixture: In a bowl, combine The Monday Food Co Keto Granola, shredded coconut, melted coconut oil, sugar-free sweetener, vanilla extract, and a pinch of salt. Mix well until the granola is evenly coated.
    • Shape the Nests: Take small portions of the granola mixture and shape them into nest-like forms on a baking sheet lined with parchment paper.
    • Bake: Bake in the preheated oven for about 10-12 minutes or until the nests turn golden brown. Keep an eye on them to prevent over-browning.
    • Cool: Allow the granola nests to cool completely. They will harden as they cool.

Assembling the Easter Nests:

    • Place Eggs or Berries: Once the granola nests are cool, gently place keto-friendly chocolate eggs or berries of your choice in the centre of each nest. These represent the eggs in the Easter nest.
