Keto Orange Macadamia Granola Crunch Bars

Elevate your snacking game with these delicious Keto Orange Macadamia Granola Crunch Bars. Perfect for a quick breakfast on the go or a satisfying snack, they’re packed with flavour and low in carbs.

Ingredients:

    • 2 cups of our new The Monday Food Co Keto Orange Macadamia Granola
    • 1/2 cup almond butter (or any keto-friendly nut butter)
    • 1/4 cup coconut oil
    • 1/4 cup erythritol or your preferred keto sweetener
    • 1 teaspoon vanilla extract
    • 1/2 teaspoon orange zest (optional, for extra citrus flavor)
    • A pinch of sea salt
    • 1/4 cup sugar-free dark chocolate chips (optional, for a chocolatey twist)
    • Extra nuts (your choice) for decoration and extra crunch 

Instructions:

  1. Prepare the PanLine an 8x8 inch baking dish with baking paper, leaving some overhang to easily lift out the bars later.

  2. Melt the Ingredients: In a small saucepan over low heat, combine the almond butter, coconut oil, erythritol, vanilla extract, and sea salt. Stir continuously until the mixture is smooth and fully melted.

  3. Combine with Granola: In a large mixing bowl, add The Monday Food Co Keto Orange Macadamia Granola and pour the melted mixture over it. Add the orange zest (if using) and mix well until the granola is fully coated.

  4. Press into Pan: Pour the granola mixture into the prepared baking dish. Use a spatula or your hands to press it firmly and evenly into the pan.

  5. Optional Chocolate Drizzle: If you’re adding chocolate, melt the sugar-free dark chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between until smooth. Drizzle the melted chocolate over the granola mixture in the pan. Then sprinkle with all of your favourite nuts as an extra topping and decoration option. 

  6. Chill: Place the pan in the refrigerator for at least 1 hour, or until the granola mixture is firm and set.

  7. Cut and Serve: Lift the granola mixture out of the pan using the baking paper overhang. Cut into bars of your desired size.

  8. Enjoy: Store the granola bars in an airtight container in the refrigerator for up to a week.
