Meet The Founder of The Monday Food Co
Indi grew up on a farm in rural New South Wales, where an appreciation for real food and simple living was integral to daily life. Leaving school at an early age, she began working full-time at 15 in a restaurant alongside two passionate women who taught her that fresh produce and simple ingredients create the most nutritious and flavorful meals, leaving one feeling light and healthy. This experience shaped her motto: keep it simple.
With a background in whole foods and raw food production, Indi has always believed that good health begins with what we put on our plates—and that nourishing the body need not be complicated.
Having experienced gut-related issues with limited success from medical interventions, she adopted the GAPS diet but struggled to find palatable alternatives. This challenge inspired the creation of The Monday Food Co. Today, Indi follows a wholefood diet free from refined sugars, preparing her own sauces, treats, and ice cream from scratch to ensure complete control over what enters her body.
At age 11, Indi was medicated for chronic anxiety, ADHD, and dyslexia; in her early 30s, she was diagnosed with Asperger's disorder. Through this journey, she discovered that whole foods and optimal nutrition profoundly impacted not only her physical well-being but also her mental state and anxiety levels.
Frustrated by the scarcity of truly healthy, gut-friendly breakfast options, Indi launched The Monday Food Co from her kitchen in Byron Bay. Her goal was straightforward: to produce wholesome, organic, and delicious products that support digestive health without sacrificing taste.
This dedication to innovation and impact was recently recognised when Indi was named the "Small Business Champion Entrepreneur" WINNER at the Women's Champion Small Business Awards 2024, an accolade celebrating outstanding female-led enterprises across Australia. This triumph underscores her commitment to empowering health through accessible, nutritious solutions. This vision continues to guide everything the company does today.
